Savory Pumpkin Soup

- Yield: 4 cups

- In a saucepan over medium heat, saute garlic and onion in olive oil until softened. Stir in remaining ingredients and simmer for 5-10 minutes.
- Blend all ingredients until smooth and return to pot. Simmer for another 5 minutes, or until hot. Serve and enjoy!

- 1/4 onion, minced
- 1 1/2 c pumpkin puree
- 1 c chicken or vegetable stock
- 1 c unsweetened almond milk
- 1/2 tsp. chili powder

- 1 tsp. salt
- 1/2 tsp. ground black pepper
